Smokin' Tom's Tri Tip

The 20 Year Tri Tip

3-5 lb. Tri-tip

2-3 tbls Olive Oil

3 tbls Smokin’ Tom’s Rub

1-2 tsp Fresh Ground Black Pepper

Instructions

  1. Unwrap tri-tip, trim excess fat if necessary, and pat dry with paper towels. Place on the counter and allow it to warm to room temperature.

  2. Coat entire tri-tip with olive oil. Generously sprinkle entire tri-tip with remaining Smokin’ Tom’s BBQ Rub and black pepper.

  3. Preheat Grill to medium heat (about 375 degrees F).

  4. Barbecue the tri-tip on indirect heat at 225-250 degrees F for about 1-1.5 hours (larger tri-tips take a bit longer). Insert an instant-read thermometer into the thickest part of the tri-tip, in a few places. Grill until an internal temperature between 130-135 degrees F (medium rare) is reached. The ends will be closer to medium while the center will be closer to rare.

  5. Remove from grill and wrap in heavy duty foil, then seal, wrap in a large towel, and let rest for 15 mins.

  6. For the best results, when slicing, be sure to slice against the grain for the most tender slices. The tri-tip grain changes directions through the tri-tip, so just turn your cutting board as needed, cutting thin slices.
